Let the sunshine in!

Even though I am a person who absolutely LOVES snow, cold weather, skiing and all of what winter brings, I must admit that even I long for spring at this point. On my birthday last week I received a couple of beautiful tulip bouquets from friends and family, and they still give color to our home.

New additions to our living room are also the butterfly pictures by Danish Hagedornhagen, the colorful ceramic coasters from the local Second Hand store Vinden and the wooden benches my husband and I made this past summer for my graduation garden party. We've now painted them in gray and black and put them in the living room, as we needed more seats for when friends come over.

The wooden box is a classic, Swedish sugar box, which actually was used to hold cube sugar. The pillows were originally handmade with bird feathers by my grandmother and just got new pillowcases with fabrics from IKEA, which is also where the white sheepskin comes from. The beautiful grey/roan sheepskin comes from a local sheep farmer and was a gift from my mother in law.

I wish you all a great, sunny day!

Cheese rarebits

My Cheese Rarebits are great for the buffet table, drinks party or just on its own as a light lunch or snack. Of course, you can plan them to the last detail, but you can also just open your fridge and cupboards and create the rarebits from whatever you already have at home!

Cheese Rarebits

1. First you need slices of bread. It can be ciabatta, toast, or sourdough bread. It doesn't matter if it is a little dry. Put the slices of bread on an oven tray.

2. Spread any kind of pesto, cream cheese, or finely mixed artichokes with garlic and olive oil on the bread slices.

3. Sprinkle olives, chopped red onion, thin slices of any smoked sausage or meat, sun dried tomatoes, fresh tomatoes, nuts, artichoke, peppers, capers, or anything you like, on top.

4. Season with salt and pepper and spread leaves of fresh herbs on the rarebits. E.g. basil, thyme, rosemary, sage.

5. Finish off with one, two or even three different cheeses of your choice. You can grate or break the cheese in small pieces and put on top. Mozzarella, chèvre, parmesan, cheddar.. anything that melts and tastes good is ultimate. This is the part that gave these rarebits their name!

6. Sprinkle a nice olive oil on top and brown in the oven for a few minutes at 200-225°C.

All gone!

Have a great winter-day!
